When I connect my Iphone to my Dell xps 400, picasso automatically opens.
How do I change the association to Itunes?

Not sure how to stop it with Picasso, but maybe if you select iTunes it might override it?

To that goto iTunes>Preferences>iPhone>uncheck the box "Disable automatic synching for all phones"
